What it is
An off-flavor neutralizer is a powder dissolved in water; meat or chicken is soaked in it before marinating to remove the raw odour, so the seasoning tastes as it should.
Dosage
| Step | Detail |
|---|---|
| Mix | 1 kg neutralizer + 10–12 L water |
| Quantity | Enough for 50 kg chicken or meat |
| Soak | 1 hour, stirring twice |
| Boneless chicken | 10 minutes maximum, stirring |
| After | Rinse with filtered water, then marinate |
For 10 kg chicken: about 200 g neutralizer in 2–2.4 L water.
The right order
Neutralizer → rinse → marinade. To boost chicken taste further, add a chicken taste enhancer or chicken flavor stabilizer to the seasoning itself (200 g per kg of seasoning), not to the soaking water.
Mistakes to avoid
- Soaking longer than one hour (or 10 minutes for boneless).
- Skipping the rinse.
- Using less water than the ratio.
Quantity table
| Chicken or meat | Neutralizer | Water |
|---|---|---|
| 5 kg | 100 g | 1–1.2 L |
| 10 kg | 200 g | 2–2.4 L |
| 25 kg | 500 g | 5–6 L |
| 50 kg | 1 kg | 10–12 L |
Who uses an odour neutralizer powder?
- Broasted and fried-chicken shops, before broasted, crispy and zinger marinades.
- Shawarma shops, before marinating chicken and meat.
- Grill houses, before shish tawook, rotisserie and charcoal chicken.
- Liver shops — chicken and beef liver.
- Fish restaurants, before marinating and frying.
- Hotels, caterers and cloud kitchens preparing large volumes.
Working in volume
- Use a dedicated clean soaking tub large enough for the water to cover everything.
- Weigh the chicken and take the neutralizer and water from the table.
- Dissolve the powder fully before adding the chicken.
- Set a timer: 1 hour for whole pieces, 10 minutes for boneless; stir halfway and near the end.
- Drain, rinse with filtered water and marinate straight away.
- Label each batch with time and quantity for the next shift.
Does it change the marinade's taste?
The aim is the opposite — removing raw odour so the marinade's own taste comes through. Always rinse after soaking and never add the neutralizer to the marinade itself; boosting chicken taste is the job of an enhancer or stabilizer.
Neutralizer or vinegar and lemon?
Vinegar, lemon, salt and flour help at home, but in restaurants quantities are large and staff change, so results vary and too much acid leaves a sour note. A neutralizer has a written ratio and fixed time, so every shift and branch gets the same clean chicken. For liver and fish, make sure the water covers everything, stir well and keep to the time; reject anything with a strong or unusual smell.
