Technical Products for Restaurants: Binders, Enhancers, Bouillon & Off-Flavor Neutralizer

Technical products work behind the taste: the off-flavor neutralizer removes raw odour from chicken, liver and fish before marinating so the seasoning tastes clean; binders lock the juices inside the shawarma cone and burger patty so slices stay moist and weight holds; enhancers and stabilizers carry the marinade into every piece and keep it steady through cooking and holding.

The range also includes chicken bouillon powder for stock in seconds, a meat tenderizer that makes cheaper cuts usable, mastic powder for the classic Egyptian aroma in boiled chicken and meat, and 99% MSG — each with a clear dosage per kilo, in 1 kg packs and 15 and 25 kg bags.

Frequently asked questions

How is the off-flavor neutralizer used?

1 kg with 10–12 L water for 50 kg chicken or meat; soak 1 hour, stir twice, rinse with clean water, then marinate. Boneless chicken: 10 minutes only.

What is the shawarma binder ratio?

Per 1 kg meat: 5 g water + 40 g binder. At 30% fat use 50 g binder with no water.

Enhancer or stabilizer — what is the difference?

An enhancer lifts the taste, spreads the seasoning and keeps juices in; a stabilizer keeps the marinade's taste steady during cooking and holding and tenderises.
