Grill, Kofta and Shish Tawook Seasonings for Restaurants

Levantine and Egyptian grill houses depend on a precise marinade, kofta that holds together and juicy chicken. Al Laith supplies the full range: regular and smoked kofta seasoning, shish tawook in three flavours, charcoal and rotisserie chicken seasonings, kofta binder, and a meat tenderizer that makes cheaper cuts tender.

If your kitchen has no charcoal, smoke extract and smoked kofta seasoning bring the grilled taste to a gas grill, and buttered rice mix completes the plate.

Firm kofta with a consistent taste

Kofta seasoning is dosed at 20–25 g per kg of meat and is already salted. With binder mix (5 g water + 40 g binder per kg), kofta stays firm on the skewer and juicy after grilling.

Smoked, BBQ and herb shish tawook

One 1.390 kg pack covers 50 kg of chicken with 4–5 kg sunflower oil, 200 g crushed garlic, two lemons and 200 g vinegar, marinated 24 hours in the fridge. Three flavours you can list side by side.

Charcoal and rotisserie chicken

A 1.390 kg pack of charcoal chicken seasoning covers 25 chickens with 3–3.5 L water; a 1.235 kg pack of rotisserie seasoning covers 25 chickens with 3 kg water. Marinate 24 hours.

More tender meat and smoke without charcoal

Meat tenderizer at 25–30 g per kg for local beef and 50 g for imported beef; smoke extract at 4–5 g per kg of grilled meat.
